Nirvana Health Products and Melon & Rye bring you this mouth-watering home-made recipe of the month: a scrumptious Spiced Apple Pie. This dessert is sure to be a crowd pleaser and is sweetened using Nirvana Xylitol™ – for a healthy alternative to the traditional Apple Pie!
Recipe
Apple Filling
- 8 Granny Smith Apples (peeled cored and quartered)
- ¼ cup Nirvana Xylitol™
- ¼ cup Maple Syrup
- 1 Teaspoon Cinnamon
- 1 Teaspoon Nutmeg
- ½ Teaspoon Ground Cloves
- Splash Vanilla Paste/Essence
- 60gm Butter
Pastry
- 280gm Plain Flour
- 180gm Butter
- 1 Egg
- 2-3 Tablespoons Chilled Water
- ¼ cup Nirvana Xylitol
Method
- Melt 60gm butter and then add all ‘apple filling’ ingredients (except apples) and simmer for 5 minutes
- Add granny smith apples and cover – let simmer for further 25 minutes
- To make the pastry, in food processor add flour and cubed butter (room temperature)
- Pulse until it is at a breadcrumb consistency
- Add 2-3 Tablespoons of water and pulse until combined
- Wrap in gladwrap and put in fridge for ½ hour
- Remove from fridge and roll out pastry
- Cut out circles to insert into a muffin baking tray or put base into a baking tray (personal preference) – *Make sure to use approx. half of pastry as remaining needs to be used for topping
- Bake for 7-8 minutes
- Remove and and let Cool
- Insert ‘apple filling’ mix into bases and top with remaining pastry
- Brush with an egg/milk wash and cut a cross in the centre
- Bake for 25 minutes at 170°C
- Let cool and serve with fresh cream
